Chicken Chop Recipe
First of all, boil cleaned potatoes in a potful of water for 15 minutes, cool down potatoes with running water. Peel off the skin and remove bad parts, cut the potatoes into long strips, transfer potatoes on a plate, seal in cling film and keep it freezer for one hour
Carefully remove bones from the chicken whole leg and trim it into boneless chicken chop, boil 1 liter of water and chicken bones in a separate source pan to make chicken stock.
Season chicken chops with salt and pepper. Flip both sides to attach seasoning. Heat up pan with a tbs of oil to make the sauce. Add in 150g diced onions, 50g diced carrot and 50g of diced potatoes into the preheated pan.
Saute the vegetables until soft and fragrant. Shen the vegetables are soft and fragrant, set aside. Heat up a pan on medium heat to make roux. Melt 30g of butter to stir fry 30g of wheat flour until slightly browned.
Add in 1 tbs of tomato paste and stir well. Slowly add in chicken stock to dilute the roux, and stir continuously by adding in hot chicken stock. Keep stirring by adding in chicken stock until all roux diluted.
Add in sauteed vegetables into the sauce. Bring to boil and continue simmer for 25 minutes. Season with 2 tsp of sugar, 1 tsp lime juice, 1 tbs oyster sauce, 1 tbs soy source, 2 tbs cooking wine and salt pepper to taste. Set aside.
Coat chicken chop with a layer of wheat flour, then dip in egg wash and lastly coat with wheat flour again. Repeat steps for the rest chicken chops. Heat up oil in a deeper pan for deep frying. Place chicken chops skin side down. Deep fry one side for 3 minutes under medium high heat.
Turn ur chicken chop another side for another 3 minutes. Tune to high heat and deep fry each sides for 30 seconds. When done, drain chicken with a big sieve. Set aside to drain away excessive oil. Use a fine sieve to remove burnt flour.
To make french fries. Heat up oil again and deep fry potatoes from the freezer. While the fries still in process, you can do whatever you want, but I will suggest to start to plate our dish. If you want your french fries to be extra crispiness, please fry it second time. Make sure you monitor the colour of the fries not don’t make it too dark.
Don’t forget to drain away excessive oil from your fries. Pour fries into a basin and season with pinches of salt. Tossing the fries to coat salt evenly.
Lastly, pour hot sauce on chicken and serve.
